This weekend was a good example to me that even though I almost always work all weekend I can also have some fun during my down time.
On Saturday while I was at work Izzy took his dog Roscoe into the groomer. This is Roz’s first professional grooming so we were pretty excited t see the finished product (sorry for the poor photo quality, phones only do so much).
When I got home from work we hung outside by the pool with my folks for a few hours and then Iz and I decided it was time for dinner. We made salsa chicken – super easy and SO good!

Tortilla chips (we use corn chips)Directions
Preheat over to 375 degrees
Put chicken breasts in a baking pan
Cover breasts with a fine layer of taco seasoning
Cover breasts in salsa (add as much or as little as you’d like)
Put pan in the over for 30 minutes
About 10 minutes before chicken is done, cook white rice (follow serving sizes on box)
Once rice and chicken are done, put rice on a plate and the chicken on top of it (still covered in salsa)
Put as much cheese on as desired
Add chips as a garnish (and to scoop up your meal!) and enjoy!
I had to sleep early on Saturday night because I of course worked Sunday morning.
After work on Sunday we grilled out for a late lunch, drank a few Twisted Teas and played with the dogs a bit. Roscoe even decided to chill out in the pool chair!
