Mexican Chicken

Hello February 1st! Please tell me that February is going to be better than January! Please please please!

This weekend was good and relaxing – which doesn’t say much since I do next to nothing all week. But nonetheless, it was. My sister in law, Taryn, came over on Saturday and we watched 3 of the Harry Potter movies – 4, 5 and 6. So fun. We’ve all seen those movies so many times that we just sit and make fun of them, which is almost more fun. Don’t get me wrong, I adore the movies and books. But sometimes it’s just fun to make fun of them.

Yesterday Dustin and I caught up on TV we missed during the week, I got some reading done and we made Mexican chicken. It’s the first time I tried out the recipe and it was SO good!

Mexican Chicken

What you’ll need:
Chicken breasts
Your favorite salsa
Your favorite cheese
Olives (optional)
White rice
Tortilla chips

How you make it:
Put the chicken breasts in a 9×13 pan
Cover the chicken in your desired amount of salsa (we used about half a can of it)
Cover the pan in tinfoil and put in the oven for 25 minutes at 350 degrees
Meanwhile, make the white rice
When the chicken has been in for 25 minutes, cover in cheese and put back in for 5 minutes until the cheese is melted
When all is done, put the chicken on top of the rice, add olives, cut it all up and eat with tortilla chips

Easy peasy lemon squeezy! And it was really good AND it totally cured my craving for Mexican food. Yay!

Oh and tomorrow is LOST! Eek! Way too excited for that show to start. I’m make predictions about what I think will happen but… with Lost, you never, ever know.
